La cucina è una passione non l'ho mai considerata un "lavoro" per me studiare un nuovo piatto in cui hanno sede oltre al gusto tutti gli altri sensi, destrutturando una ricetta o assemblando materie prime ad un primo impatto senza feeling, capace di stimolare un'emozione sensoriale "è la mia sfida quotidiana". "Granita, Mousse, Olio, Sfoglia, Polvere, Gelato, Profumo, Spuma...è cosi che si può esprimere un SAPORE".
